Project Dolium :
We're going to create microcuvées:
-Vinification in jars of 10 hectoliters, type Dolium.
Raising in demi-muid (500 l barrel).
Aged from 12 to 18 months, immersed in a lake at a depth of 5 meters.
We will develop the infrastructure:
Create the immersion basin in an existing lake on the property.
Upgrade the cellar to accommodate the bottling line and storage barrels.
We are going to plant 4 qualitative grape varieties on 4 hectares for this project:
In red: Syrah and Malbec
In white: Viognier and Chenin
The first cuvées will be vinified with our Merlot and Cabernet already in production.
Project Grapes :
We will be planting other grape varieties to diversify our range of white wines :
Colombard and Gros Manseng
